So the weekend is usually for pancakes!! A long way back when I was on a real hunt for yummy Vegan baking alternatives for my daughter Abbie I discovered this recipe. Before this I used to make the Jamie Oliver ones which are amazing and fluffy but a lot of work and poor Abbie would have to have toast or potato waffles with her syrup, I know poor child totally neglected!!! This recipe is super easy and I guarantee you will not notice the difference between normal pancakes and these, well actually you might because these are yummier (is that even a word, well it is now). Most recipes call for Plain Flour but I actually use Self raising, even with baking powder added the plain flour does not give you as fluffy a pancake………….Give them a go girlies I promise you will not be disappointed xx
What you’ll need:
- 1 cup Self-Raising flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/8 tsp salt
- 1 cup soy milk (or other vegan milk substitute)
- 2 tbsp vegetable oil
- extra oil for greasing griddle or frying pan
Tip: I make this x3 so that I will have enough to freeze for a morning when your not really in the mood for all the drama that can entail a baking session! So that’s 3 cups of flour and so on. You can also use Gluten free flour and baking powder.
What to do (the easy bit):
Sift all your dry ingredients into your bowl, then add your milk alternative and vegetable oil. Mix until it comes together, do not over mix or your batter will become runny, you will have some lumps but this is ok they will cook out on the pan. I pour my batter into a jug just to make it easier to put on the pan and your ready to cook.
Tip: When you see the bubbles start to appear on the top of the pancake this tells you its time to flip.
Know all that’s left to do is your toppings. We have bacon and syrup, nutella and banana or whatever your happy heart desires ……….
