Winter Warmer Soup

 Im not sure if it’s only me but this cold is killing me, granted I hate the cold but it’s just freezing everywhere!!!! I know it’s that time of the year but I don’t remember it bothering me quite so much and it’s only the start eeeekkkk…..

Today I felt like a lovely warm soup but I’m not a lover of packet soup so I rustled up my own, it’s nearly as quick (well not really) and far more satisfying.  You can put anything into your soup but the base I normally use is onion, carrot, celery and garlic from there the world is your oyster!! Hope you like, it’s quick and easy to make and anything were you just bung it all in the pot is a plus……… I freeze it too it’s so handy if your too tired to make dinner on a cold evening with crusty bread, the kids love it!! I normally get enough for 8-10 adult portions from this, If you want to freeze a big batch make 2 to 3 times this amount and you’ll be sorted for a good while.

What you need:

1 Onion

4 Carrots

2 Parsnips

2 Sticks of celery

1 Clove garlic

1/4 Turnip

1/2 Sweet potato

5 Stems of Brocolli

5 Stems of Cauliflower

2 litres of stock (chicken or veg whichever you desire)


Chop all your veg roughly there’s no prizes for being neat! Sweat off your onions and garlic, then add your carrots, turnip and sweet potato cover with your stock bring to the boil and allow simmer for 15 minutes. Add your cauliflower and brocolli and simmer for a further 15 minutes, add pepper for sure and it’s up to yourself if you want salt.  Use a hand blender to blend and it’s ready to be devoured x
