Hey there Girls,
As most of you by now know one of my daughters has severe allergies to egg, dairy and nuts (I’m sure there’s more that we still haven’t discovered!) so I always look for yummy baking alternatives that she can enjoy too and to be honest we have replaced alot of our treats with hers because they taste so yummy!!!!
Last year I went on the hunt for choc chip cookies, nice chewy American style ones and after a few failed attempts we found a keeper!! So here it is, you really need to give these a try girls you won’t be disappointed and they’re healthy, as treats go…
What you’ll need (makes 10-12 medium sized cookies):
1 cup Plain Flour
1 tsp Baking powder
1/2 tsp Baking soda
1/4 cup Unrefined sugar
1/4 tsp Sea salt
1/3 cup Maple syrup
1 – 11/2 tsp Vanilla extract
1/4 cup Coconut oil (generous cup, melted)
1/3 cup Non dairy choc chips (dark choc chips)
What to do (it’s so fast and easy!):
Preheat your oven to 180 and line your baking tray with greaseproof paper.
Put all your dry ingredients in a bowl. Mix all your wet ingredients in a jug until combined and then add with choc chips to the dry ingredients. Mix together lightly make sure not to over mix.
Take a tbsp of mixture and form a ball and put on tray and lightly push them down, then put into the preheated oven for 11 – 12 minutes until lightly golden on the outsides and they will still feel very soft.
Take them out and cool for a couple of minutes on the tray then transfer to a rack and they are ready to devour!!!!
